The more you hang off, the more contact patch you have in reserve. If you need to tap into that little bit more lean angle, you just lean more. If you are already at maximum contact patch, it's too hard to hang off more mid turn.

I tend to reserve deep hang-offs to sweepers and tight hairpins where flicking back and forth isn't required.
