Roo is very gamie in my opinion, not something I'd want to try again.

A few years ago I went to a wild food buffet. Every dish had a number by it, and you were given a card for notes. Basically, you should take a bit of everything and make notes on the card what you thought, liked and disliked. THEN, at the end of the meal they tell you what each number was. It was all gourmet prepared... rattlesnake, gator, random fish, roo, squirrel, rabbit, grubs, sweet breads (gak), brain,

That's bullshit. I grew up in the bayou of southern Louisiana. We would only feed gator to the dumbass tourists because the meat is shitty and only dumbass tourists would want to eat it and if you are saying Cajuns don't know how to cook than you are sadly misinformed.

I'd eat roo if I had the chance. I've only had rabbit, buffalo, lamb, goat, deer... most your normal stuff, but I'd give roo a shot. I'd never eat any ground vermin though like a squirrel or ground hog.

I was stationed in Germany when that mad cow shit hit Europe 5 years ago... Most restaurants wouldnt serve beef so they used horse instead... not bad tho

The white meat from the tail, once tenderized, is delicious, especially when sauteed with just a hint of cayenne pepper.

Anyway, I've had it before just for shits and giggles. Not much of a taste, really and quite chewy. The best part was the jelly that was made from various blowfish parts ala head cheese.
